Swati started her career as a food and beverage management associate at MGM Resorts International in Las Vegas. She grew up in the food business and developed her passion for restaurants while working for a premier global hospitality brand. Her experience in the back of the house helped her as the Operations Manager at a gourmet grocery and foodservice supplier in Southern California. Swati wears many hats -- she is a business college professor, freelance food writer, and editor. Her teaching and research interests include small business management and leadership and helping food businesses optimize for success.
